Adding A Menu

This manual tells you how to add a new menu.

 

Choose FOOD - Menus from the menu bar on the left.

Choose Add from the top of the view.

 

Name And Amount Of Portions

Enter a name for the menu and set the amount of portions through the Portions button on the top of the window.

  • You can set a default amount of portions for the whole menu in the All Meal Types row of the Default Portion Amounts tab. You can set the default amount of portions by meal option, as well. Once you have entered the amounts, save the information by choosing Save on the bottom of the window.
  • You can easily replace the default amounts with new values meal option specifically into the menu for a selected time period, for a cycle or for the whole menu at once.
  • The amounts of portions can be edited by menu rows, as well.
  • If you are using the Dynamic Menus functionality, which enables you to make kitchen specific modifications to shared menus, the administrator is able to view the kitchen specific default amounts set by the kitchens.

Duration and Cycles

Define the Start Date for the menu in the Duration tab on the right. Tick off the ’sat-sun’ box if the menu is valid on the weekends, as well. Then add the needed amount of weeks into the menu with the ’Add week’ button. The system will automatically add the dates of the following week into the menu.

Under the title Show Weeks you can set the time frame for the menu that will be displayed on the left side of the window.

You can add cycles for the menu into the Cycles field. The number of cycles define how many times the menu will be repeated. For example, if the menu includes 5 weeks and you set 3 as the cycle, the system will calculate the total duration for the menu next to the Cycles field, which in this case would be 15. In addition, the system will automatically add all the weeks into the menu.

When you add cycles to the menu, the Master Cycle and the Current Cycle buttons will be activated above the menu, as well as the arrow buttons which enable you to move in between the cycles. You can edit the information in the menu only in the Master Cycle window.

Note! If the Dynamic Menus functionality is activated in the Food tab of the Basic Data - Settings - Program Settings function, you can edit the information in the menu also in the Current Cycle window. Adding Meal Options

Add the Meal Options into the menu from the Meal Options tab on the right.

You can add a meal option at once to all days of a week by dragging the meal option onto the week row. Alternatively you can add a meal option to one day at a time.

Notice that a meal option has to be added into the menu before you can add recipes, servings or ingredients to it.

 

Adding Recipes

Add recipes to the menu from the Recipes tab on the right. You can search for recipes by name, additional name and by main group or subgroup.

You can preview a recipe with the Preview function before adding it to the menu. You can open the preview function when on the Recipes tab: Click with the right mouse button on the recipe and then choose Preview.

Add the recipe by dragging it onto a meal option. Accordingly you can bring a recipe at once to all meal options of a day or a week. 

In the All window (All/Week selection above the menu) you can add a recipe so, that you first select a week, a day or a meal option on the menu and then double-click on the recipe on the list in the Recipes tab on the right.

You can view a recipe in more detail directly from the menu with the View function. The View function is opened either by clicking on the recipe row with the right mouse button and then selecting View on the drop-down menu, or by opening the recipe row and then choosing View.

Recipes are marked with a red dot in the menu window.

 

Adding Servings

You can add servings, for example à la carte dishes, to the menu from the Servings tab. A serving can be taken into the menu as it is, or it can be broken down into recipes and ingredients. In this case you need to tick the ’Extract servings’ box before adding the Serving. Choose this option if you wish to view or print the recipes of a Serving for production.

Servings are added into the menu in the same way as recipes.

Servings are marked with a green dot in the menu window.

 

Adding Ingredients

You can add ingredients, as well, to the menu from the Ingredients tab. You can search for ingredients by name and by groupings. Add the ingredient into the right week, day or meal option by dragging or double-clicking.

 

Editing Menu Rows

You can edit information on the menu rows, if needed. Open a row for editing by clicking with the right mouse button on the row and choose Edit from the drop down menu. You can open a row also by double clicking on it.

  • You can edit the name displayed on the menu and provide additional information.
  • When you tick the Publish box, the menu row will be displayed in the "Menu" and the "Ingredients, nutritive values" printouts, as well as in the JAMIX MENU Service (additional feature). The Publish box will be ticked as default on new menu rows. If you want to hide the menu row from printouts and JAMIX MENU Service, you can untick the Publish box.
  • You can lock the portion size of a recipe so that it does not change on the menu even if it was changed in the Recipes function. "Portion size of the recipe locked" will be ticked as default on new menu rows.
  • You can edit the size of portion, the amount of portions and the total weight in the 'Pre-production sheet' tab.
  • In the Meal Type row you can copy the planned amount of portions easily at once to the menu rows underneath it by choosing 'Copy portions to menu rows'. This makes it easier and quicker to manage data, when you want to register the same amounts of portions to the meal type and the menu rows related to it.

 

Sales Price And Costs

In the Sales Price column you can provide the sales price for the portion either with or without tax, as well as the Tax percentage. Based on the tax percentage, the system will automatically calculate the sales price with or without tax, according to the price that has been entered.

You can provide the sales price information to the meal option only. You can also provide it row-specifically under the meal option, and the system will sum the price information into the meal option row.

The sales price for the meal option will be shown in the JAMIX MENU Service (additional feature) as default. The prices for recipes or ingredients will be shown in the JAMIX MENU Service, if the "Presentation type (product list)" has been selected in the Publish Menu tab. 

Ingredient Cost

The ingredient cost for the recipe or the ingredient per portion is shown in the Cost column.

In the Meal Option row the system will sum the ingredient costs per portion for all recipes or ingredients that are under that meal option.

Margin

Based on the sales price and the cost the system automatically calculates the margin both in currency and in percentage.

Margin calculations that have been made for recipes or servings will not be included in the margin calculation in the Menus function.

 

Saving the information for the menu row

Accept the changes on the menu row by choosing Close.

 

General Tab

You can provide additional information for the menu in the General tab, if needed. You can add a number and an additional name for the menu.

 

Groups Tab

In the Groups tab you can add a Menu group to the menu which helps in searching for the menu in the Menus view. Menu groups are managed in the BASIC DATA - Groups function.

 

Once the menu is finished choose Save on the top of the view.
