Editing the ingredient row

Changing the raw weight of an ingredient

You can change the raw weight of an ingredient. You can enter either the raw weight or the purchase weight in ounces or pounds, or by ratio. Raw weight can be entered by percentage, as well. The unit of measure will be automatically updated to the purchase weight according to the one chosen for the raw weight.

Adding the ratio

If the ratio is missing from the ingredient’s basic data, you can add it by choosing Change ratio. Enter the ratio and save your entry. After this you can enter the amount of the ingredient by ratio, as well.

The step of the recipe

You can define in which step of the recipe the ingredient is used. Accept the changes by choosing Close.

Tips

Recipe Description

From version 4.44.0

Recipe - General Info tab - Description

You can add a description for a recipe.

You can choose to print the description on recipe printout.

Locking weights for ingredients

Ingredient weights can be locked so that a change in the total weight does not affect the raw weight on the ingredient row. You can lock weights for all ingredients on the recipe at once. You can also lock weight row-specifically, for example if you want to keep the amount of protein the same even if the amount of portions or the portion size changes.

You can also lock all ingredient rows of a sub-recipe at once, for example when you want to keep the cake size of a layer cake the same even if the amount of frosting changes.

The program takes the row-specifically locked weights into account in the View function, as well.

Editing Weights For Recipe: Locking Cooking Loss

From version 4.44.0

Recipe - Edit Weights - Lock Cooking Loss

The selection is active as default but you can deactivate it, if needed.

  • When the cooking loss is locked and you update the raw weight, the system will automatically calculate the cooked weight based on the cooking loss percentage. Similarly, when you update the cooked weight, the system will automatically calculate the raw weight based on the cooking loss percentage.
  • When the cooking loss is not locked and you update raw weight or cooked weight, the system will automatically calculate the cooking loss percentage based on the raw and cooked weight.

Selecting columns that are displayed

You can select ingredient columns that are displayed on the recipe window. Selection is made through the cog settings icon that can be found after the outermost column on the right. Selections will be saved as user-specific default setting.
